Braised Celery and Chorizo

Braised Celery Chorizo

  • 8 Celery sticks
  • 150ml of oil
  • 1 onion diced
  • 75g of chorizo sausage
  • 1 tbsp of smoked paprika
  • 300ml of white wine
  • 2 diced tomatoes
  • 1 tbsp of butter
  • Salt and Pepper
  • ¼ bunch of basil leaves


In a heavy based pot, heat oil and fry off the onion with chorizo sausage. Add celery and smoked paprika. Add the wine and tomatoes, and simmer for 2 minutes. Finish with stirring in the butter, salt and pepper and fold through the basil leaves.
