Celery Dip

  • ½ a celery
  • 400ml milk
  • 200g ricotta
  • ¼ bunch of dill picked
  • 1 tsp of minced garlic
  • 150 ml of olive oil
  • 80ml of lemon juice
  • Pinch of Salt
  • Foil for wrapping garlic
  • 1 tbs of smoked paprika (optional) for garnish


Cook celery in a heavy based pot with the milk until tender. Add dill to food processor with the celery, blend in pulses until smooth. Add ricotta, blend until smooth.

Season with salt and lemon juice.
