Celery & Vegetable Stock

Ingredients

  • 1 whole Celery Heart
  • 100ml of oil
  • ½ bunch of thyme, chopped
  • 1 garlic clove, chopped
  • 2 onions, peeled
  • 2 carrots
  • 1 leek
  • 3 tomatoes
  • 3 bay leaves
  • 10 fennel seeds
  • 5 litres of stock

Method

Heat oil, thyme and garlic in pot and sweat of onion until lightly golden. Cut all vegetables in a uniform shape. Add celery, carrots, leeks and the rest of the ingredients. Cover with stock and simmer for 1 hour. Add extra water if required.
