Celery, Zucchini, Squash and Hummus Salad

Ingredients

  • 1 whole Celery Heart
  • 100ml of olive oil
  • 6 squash
  • 2 zucchini
  • 50g of rocket leaves
  • 100g of quinoa
  • 100g of barley
  • 6 tbsp of hummus
  • 1 lemon, squeezed
  • Salt and pepper

Method

Heat oven to 180C. Place 2 pots of water on stove, to boil. Cut the squash and zucchini into a uniform shape and cook in oven until just soft. Slice celery into uniform shape. Cook both of grains separately, until just cooked. Mix all ingredients together, apart from the hummus. Spoon hummus onto your plate and serve salad on top. Season salad with lemon juice, salt and pepper. Enjoy!
