Spelt Pasta


  • 1x pkt of 500g Spelt Pasta
  • 1 brown onion diced
  • 2 cloves of garlic
  • 1 pnt of Organic mixed cherry tomatoes
  • 100ml of good quality olive oil
  • 150g of Goats cheese
  • 1x bunch of spring onion
  • 1x bunch of Flat leaf Parsley
  • 1 lemon (cut into cheeks) to squeeze for juice
  • Salt
  • Pepper



Cook Spelt pasta in boiling water for the instructed time. While your pasta is cooking, dice your onion and garlic. Half your cherry tomatoes (you can use any tomato you desire just cut into bite size pieces)

Sweat off your onion and garlic in a non-stick pan or wok. Add your tomatoes and cook quickly so they are just starting to break down. Drain your pasta well and put it into a large serving bowl, add your olive oil while pasta is still hot, then add your cooked ingredients.

Mix well and put aside while you pick and chop your herbs. Season Pasta mix with Salt and pepper to taste and your lemon juice. Add your herbs and garnish with some broken up pieces of goats cheese and more herbs.
